WHAT IS CANDELILLA?
Candelilla is a sensorial gastronomic experience through the history of Mexico and its flavors. It features a seven-course surprise menu with pairings rigorously adhering to the techniques and ingredients of the current historical period.
Attendance is by reservation only, and there is only one shared table for up to 30 people per event.
The course lasts a maximum of 4:30 hours and is guided by an immersive, sensory-enhancing audio program—created by us—over five episodes. The program consists of:
* Initial workshop where the culinary techniques of the time, based on our research, are demonstrated.
* Immersive audio experience, featuring a 7-course menu with pairings (alcoholic and non-alcoholic) and digestives at the end.
* Professional explanation and guidance from the chef and historian.

We have over 8 years of experience, 48 different seasons, +3810 recipes created and +610 culinary techniques researched.
WHY ANTI-RESTAURANT?
Because nothing we do happens in a conventional restaurant:

* Chef Héctor Gil guides the entire experience from start to finish.
* Our guests come with one purpose: to experience, enjoy, and learn about Mexico.
* Although it's a high-end experience, featuring 100% organic Mexican ingredients, high-value produce, and over four days of cooking prior to the event, there's a completely homey and relaxed atmosphere, far from the pretensions of haute cuisine. The team is approachable, friendly, and passionate.
WHAT IS THE PRICE AND WHERE IS IT LOCATED?
Candelilla starts at $1,800 MXN per person. Food, drinks, and the experience are included. Service is not included.
Candelilla has two locations:
1. South of Mexico City in Coapa, in our original home.

2. Starting in October 2025 at the wonderful CASA SAUTO, a historic, emblematic, and luxurious venue located in the heart of the historic center, in the Zócalo of Mexico City.

You can book and pay online, with a credit card payment link, or by bank transfer.
You can pay 100% of the reservation, or you can pay 50% in advance and cover the rest up to one week before the event.

WHO IS THE CHEF?
Héctor Gil is a chef and researcher of Mexican cuisine with over 15 years of experience.
He has been awarded as a researcher and is recognized as an authority on cooking.
An ancient Mexican artist, she has worked in both the research and academic worlds (EGADE, Claustro de Sor Juana, UP, Ambrosía, Institut Paul Bocuse, Vatel France) and the culinary world (Paul Bocuse, Guy Savoy, Pierre Hermé, Guy Santoro, Celler Can Roca, Yuri de Gortari).
He participated in the UNESCO project to designate Mexican cuisine as an intangible heritage of humanity in 2010. At Candelilla, he has been creating signature cuisine for over eight years, rigorously adopting the original and ancient techniques of Mexican cuisine.
For him, the foundation of creativity and work is research, scholarship, and a scientific and emotional understanding of cooking, anthropology, and history. He has created more than 3,800 recipes at Candelilla.
