Candelilla was born in January 2017 as a project that decided to approach Mexican cuisine from the perspective of academic research. But with the warmth and heart of conveying the research, touching the souls and emotions of guests through a profound and emotional journey into the culture and anthropology of the Mexican people.
Over the course of eight years, it has built a wonderful community of repeat visitors season after season, enjoying so many stories of Mexico throughout history. The work is far from over; Candelilla has only covered 3.8% of Mexico's culinary heritage!
It's not about eating, it's about traveling back in time. It's not about a restaurant; you come to Candelilla to learn and be moved by the legacy of our PEOPLE. The immersive audio experience is written, produced, scored, and conceived by us; we are chefs, writers, historians, researchers, artists, musicians, playwrights, set designers, and storytellers. IT'S NOT A RESTAURANT.
It's a professional and very high-end experience: "We've taken Mexican cuisine to a very high level of quality and excellence, while respecting the techniques that have historically been eaten or cooked in everyday Mexico."
